Easy Meal!
I’ve been running around like a crazy woman, coming home from work and leaving to pick up my daughter form someones house, since our usual sitter can’t make it. So my go to quick meal has been a protein, either chicken, or salmon. All I have been doing is putting the chicken in a baking dish, drizzle with olive oil, lemon and some dry oregano, salt and pepper. If I’m feeling ambitious I cut up a few potatoes and throw them in there as well. Put about 3TBS of water to help in the cooking process, 350 oven and after about 20 minutes, all done! If I’m making fish, I don’t put anything else in the pan with it, but I do take a smaller pan and put veggies, asparagus is great, treat it the same way and they cook at the same time! Quick, easy and healthy!
